It's not a full meal, but every time we grill, we add two chicken breasts for salad/nachos/pizza later in the week. This week was chicken caesar, the toddler currently eats a "deconstructed" salad that's basically chicken and veggies with ranch

This is such a great idea! I've been consciously making extras whenever I do a "bigger" cooking session too and it's so helpful later in the week to have ready-made leftovers or a prepped portion of another meal.

I like this baked taco recipe from Budget Bytes. I usually use a whole pound of meat (my husband doesn’t really like beef so I make it with ground turkey) and I use store-bought taco seasoning.

Sometimes I make a double batch of the filling because it freezes well!

I love this post because I always need new dinner ideas.

Homemade Hamburger Helper has been an MVP weeknight dinner at my house. Everyone inhales it. It's pretty hands-off after you brown the ground beef. Tips to make it as easy as possible:

- use a big heavy pot (dutch oven, etc.) so you can stir aggressively at the end to help everything come together without stuff splashing over the sides

- buy pre-diced onion (or just omit it)

- skip the parsley, obviously

- I usually serve with a bagged salad kit situation (my kids love picking the dried cranberries out of the Taylor Farms Sweet Kale one, does this count as a kale exposure?)
